How to make it

  • In a small bowl, whisk EVOO, Sumac powder, (tahini?), lemon juice, and parsley.
  • Toss vegetables in a bowl, drizzle dressing over veggies, and lightly toss again.
  • Serve with some pita bread or good Italian hard bread.

    I made this "Israeli Salad" as a variation on the Middle-Eastern-style salads we typically eat. I left out the scallions and tempered the onion in lemon juice for an hour before mixing with the salad as we are not big fans of a raw-onion flavor. I also doubled the sumac (big difference!!!) and added the optional yellow bell pepper. This salad was delicious and not surprisingly tasted very much like tabbouleh.
