Great, healthy, chicken filler for taco night. I like it better than using chicken breast. The thighs are juicier and sweeter.

Ingredients
  • 2 lbs boneless chicken thighs
  • 1 large white onion, peeled and quartered
  • 5 cloves garlic, peeled and lightly crushed
  • 2 bay leaves
  • 1 Tbsp ground cummin
  • 1 ancho chili
  • Salt and pepper to taste.

Directions
  1. Combine all ingredients in a saucepan and add enough water to cover the chicken.
  2. Turn heat to high, bring to a boil, and skim any foam that comes to the surface.
  3. Partially cover saucepan, reduce heat to a steady simmer.
  4. Cook until meat is tender, ~ 30 minutes. Remove from liquid and cool.
  5. Shred the chicken meat with your fingers. Taste and adjust seasoning.
  6. Use within a couple of days in a Taco with some "Salsa Fresca" and "Perfect Guacamole"

I do this almost the same way, except that I use 2-3 tbs garlic juice from chopped jarred garlic and a pinch of all things, nutmeg, then I squeeze lime on it and let it sit overnite(when I cam wait!:00
