Fresh Basil Salad

- 6-7 cups tightly packed spinach (silverbeet) leaves (remove stems and tear larger leaves) shopping list
- 2 cups tightly packed basil leaves shopping list
- 1/2 cup extra virgin olive oil shopping list
- 3 cloves garlic, finely chopped shopping list
- 1/2 cup pine nuts (kernels) shopping list
- 4 oz diced prosciutto or shaved ham shopping list
- 3/4 cup grated Parmesan or romano cheese shopping list
- 2 fresh peaches (when available), peeled and sliced shopping list
How to make it
- Place spinach and basil leaves into a serving bowl
- In a small skillet or saute pan combine olive oil, garlic and pine nuts
- Cook over medium heat until pine nuts turn golden brown
- Add the prosciutto or ham
- Continue cooking for 2-3 minutes to warm prosciutto
- Pour this mixture over spinach and basil leaves
- Add the cheese
- Fold all together
- Add salt and freshly ground pepper to taste (remembering the cheese will be salty)
- Serve immediately
- Note: when fresh peaches are available, add to the salad just before serving
