Ingredients

How to make it

  • Place spinach and basil leaves into a serving bowl
  • In a small skillet or saute pan combine olive oil, garlic and pine nuts
  • Cook over medium heat until pine nuts turn golden brown
  • Add the prosciutto or ham
  • Continue cooking for 2-3 minutes to warm prosciutto
  • Pour this mixture over spinach and basil leaves
  • Add the cheese
  • Fold all together
  • Add salt and freshly ground pepper to taste (remembering the cheese will be salty)
  • Serve immediately
  • Note: when fresh peaches are available, add to the salad just before serving
