Fresh Basil Salad Recipe
This is a different spin for a salad. Very herby and very healthy. Good source of vitamins and minerals and still tasty. Gluten free!

Ingredients
  • 6-7 cups tightly packed spinach (silverbeet) leaves (remove stems and tear larger leaves)
  • 2 cups tightly packed basil leaves
  • 1/2 cup extra virgin olive oil
  • 3 cloves garlic, finely chopped
  • 1/2 cup pine nuts (kernels)
  • 4 oz diced prosciutto or shaved ham
  • 3/4 cup grated Parmesan or Romano cheese
  • 2 fresh peaches (when available), peeled and sliced

Directions
  1. Place spinach and basil leaves into a serving bowl
  2. In a small skillet or saute pan combine olive oil, garlic and pine nuts
  3. Cook over medium heat until pine nuts turn golden brown
  4. Add the prosciutto or ham
  5. Continue cooking for 2-3 minutes to warm prosciutto
  6. Pour this mixture over spinach and basil leaves
  7. Add the cheese
  8. Fold all together
  9. Add salt and freshly ground pepper to taste (remembering the cheese will be salty)
  10. Serve immediately
  11. Note: when fresh peaches are available, add to the salad just before serving
