Creamy Rice  Apple Pud Recipe
This is similar to dessert rice pudding, but less sweet. The addition of fruit makes it a satisfying, hearty breakfast or dessert that even the kids will love. Makes six 3/4 to 1-cup servings.

Ingredients
  • 3 cups skim milk
  • 1 ½ cups water
  • ¾ cup brown long-grain rice
  • 2 tbsp brown sugar
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp maple extract
  • 1 medium Macintosh apple, chopped

Directions
  1. In large saucepan, combine milk, water, rice and sugar.
  2. Bring rice to a boil over medium-high heat; reduce heat to medium and simmer, stirring occasionally, until rice is tender, about 40 minutes.
  3. Remove 1/2 cup rice mixture and mix with egg.
  4. Return to saucepan and add vanilla, maple and apple.
  5. Serve warm.
