Ingredients
  • 2 egg, lightly beaten
  • 1 can (5-1/2 o.) spicy hot V8 juice
  • 1/2 cup seasoned bread crumbs
  • 1/2 cup quick-cooking oats
  • 2/3 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 tsp. chili powder
  • 1/2 tsp, salt
  • 1/2 tsp. pepper
  • 2 lbs. very lean ground beef (85%lean)
  • Mashed Potatoes:
  • 4-2/3 cups water
  • 1 cup milk plus 2 Tbsp. milk
  • 7 Tbsp. butter, divides
  • 1-3/4 cups mashed potato flakes
  • Ketchup and mustard

Directions
  1. Preheat the oven to 350 degrees.
  2. Grease two 9" square baking pans.
  3. In a large bowl combine the first nine ingredients.
  4. Combine beef over mixture and mix well.
  5. Pat into the pans.
  6. Bake for 20 minutes until meat is no longer pink, drain.
  7. Let stand for 10 minutes.
  8. In a large saucepan bring the water, milk, butter and salt to a boil.
  9. Stir in potato flakes
  10. Remove from the heat.
  11. Invert meat loaf onto serving platter, invert second meat loaf onto a cutting board.
  12. Spread 1-1/2 cups mashed potatoes over loaf on the platter.
  13. Carefully slide second loaf onto the potatoes.
  14. Spread 3-1/2 cups mashed potatoes over the top and sides.
  15. Spoon remaining mashed potatoes into pastry bag with open tip #195.
  16. Pipe a shell border around the bottom and top edges.
  17. Place ketchup and mustard in resealable plastic bags, cut a small hole in a corner of each bag.
  18. Pipe ketchup and mustard on cake.

Sorry for the typo and left out the main ingredient, Oh MY I think I am losing it big time, LOL, LOL, LOL. But thanks for calling this to my attention. It is 2 pounds of very lean ground beef about 85% or higher lean. I have made the correction in the recipe THANKS again have a wonderful day!!!!

I love decorating things and meatloaf and mashed potatoes are favorites of mine. Your recipe is very much like mine but I never thought of the frosting with mashed potatoes. Very Clever! I'd love to take a picture of it when I'm done but I think I am the last person in America without a digital camera. I must get one.
