Ingredients
  • 1 onion, chopped
  • 1/4 cup water
  • 1 cup whole tomatoes, undrained and chopped
  • 1/2 cup tomato puree
  • 1 tsp dried whole oregano
  • 1/2 tsp garlic powder
  • 1/8 tsp pepper
  • 4 chicken breast halves (~ 2 lbs) skinned
  • 2 cups hot cooked spaghetti

Directions
  1. In a 10 inch skillet, combine onion and water , cover and cook over medium heat for 3 to 4 minutes or until onion is tender.
  2. Stir in tomatoes, tomato puree, and seasoning, cover. reduce heat and simmer for 10 minutes.
  3. Add chicken to the skillet, spoon tomato mixture over the chicken, cover and simmer for 30 minutes.
  4. Uncover and simmer an additional 15 minutes.
  5. Serve over the hot spaghetti.

This is definitely simpler and faster than that old fashion one where you have to brown the chicken, add the green pepper, kalamata olive etc and simmer for 4 hrs !
