How to make it

  • Arrange pepper halves on a broiler pan; broil until skins are blackened.
  • Remove; cover with a towel and set aside until cool.
  • Slice an "X" in the base of both tomatoes; place in a small bowl and cover with boiling water for 2 minutes.
  • Drain and cool.
  • Peel and discard skins from peppers and tomatoes; finely chop peppers and tomatoes.
  • Combine with remaining ingredients in a heavy saucepan; heat over medium heat until sugar dissolves.
  • Bring mixture to a boil; reduce heart and simmer for 30 minutes.
  • Store, covered in a refrigerator for up to one month.
