Oven-Baked Buttermilk Chicken Recipe

Ingredients
  • 1 envelope Lipton Onion Recipe Soup Mix
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup buttermilk
  • 2 1/2 to 3 lbs chicken, cut into serving pieces
  • 1/4 cup butter or margarine, melted

Directions
  1. Preheat oven to 425^ degrees.
  2. Combine sonion soup mix with flour; set aside.
  3. Beat eggs with buttermilk.
  4. Dip chicken in buttermilk mixture, then in flour mixture, coating well.
  5. Place in a large shallow baking pan on rack, and chill 30 minutes.
  6. Drizzle with butter; then bake 45 minutes or until done.
