Ingredients

How to make it

  • Beat together the potatoes, cheddar cheese and cream cheese until cheese is melted and no potato lumps remain.
  • In a skillet, saute onions in butter until soft.
  • Stir 1/3 cup of the onions into the potato mixture; salt and pepper to taste.
  • Place a layer of lasagna noodles in the bottom of a greased 9x13x2-inch pan. Spread 1/3 of the potato mixture over the noodles. Repeat layers, ending with noodles.
  • Pour remaining onions over all.
  • Bake, covered, in a 350-degree oven until heated through, about 30 minutes.

    I made this last night, and really liked it. It's very filling. Because of my pepper obsession, I chopped a couple of green chilis into the onion mixture and it was gooood. The only change I would make next time would be more peppers! Thanks for the yummy recipe!

    Well I made it!!! :) I thought my son was going to stuff himself to oblivion, my husband (whose Mom/Grandmother make homemade pierogi's) loved it(suggested I add more onion, I only used one, and more cheese, I put feta, white cheddar, sliced yellow & cream cheese (we're cheeseaholics), my sister & I are stuffed as well!
    Fabulous recipe & I'm going to definetly make it again. I also thought this would be a great foundation for shepard's pie too.
