Onions Menagere

From The woman's Day Encyclopedia of Cookery circa 1966 A different side dish with a nice presentation. Beets can be substituted for the onions.
Ingredients
- Easy cheese sauce (Make First) shopping list
- 3 Tbl butter shopping list
- 3 Tbl flour shopping list
- 3/4 tsp salt shopping list
- 1/2 tsp worcestershire sauce (optional) shopping list
- 1/8 tsp black pepper shopping list
- 1 1/2 Cips milk shopping list
- 1 cup grated cheddar or Swiss shopping list
- 1 lb small white onions, peeled and parboiled shopping list
How to make it
- Cheese Sauce
- Melt butter and remove from heat
- Stir in flour and seasonings
- Gradually stir in milk until well mixed
- Cook over medium to medium high, stirring constantly, until thick and smooth (you may put the pan over boiling water to prevent sticking).
- Cook 5 minutes longer, stirring often
- Add cheese, sir until well blended
- About 2 cups
- Onions
- Parboil and peel onions, arrange in buttered baking dish
- Pour Easy cheese sauce over onions
- sprinkle with grated cheese
- Dot with butter
- Broil until heated through and golden
- 4 servings
