Spicy Cheese And Beer Soup Recipe

Ingredients
  • 2 tbls. butter
  • 1 onion, finely chopped
  • 1 carrot, shredded
  • 2 cups milk
  • 1/4 cup flour
  • 1 1/2 cups sharp american cheese, shredded
  • 1 can(12oz.) beer
  • 1 cup cabbage, shredded
  • 1/2 lb. linguica, cut into bite size pieces

Directions
  1. Melt butter in saucepan
  2. Add onion, carrot, and cabbage and cook until tender
  3. Whisk together milk and flour
  4. Stir into onion mixture
  5. Cook over medium heat, stirring constantly until thick and bubbly(about 5 minutes)
  6. Over low heat, add cheese gradually, stirring constantly (DO NOT BOIL)
  7. Stir in beer and linguica
  8. Heat through

I've never looked for Portuguese sausage. Is it available in most meat markets?
