Ingredients
  • 6 eggs
  • ¼ cup milk
  • ½ cup apricot puree
  • ¼ cup almonds sliced
  • 4 slices of Brie cheese * optional
  • ½ teaspoon ground cinnamon
  • 8 slices egg bread (sándwich bread)
  • 4 tbsp. Unsalted butter
  • confectioners sugar
  • berries jam or Maple syrup

Directions
  1. In a large bowl, using the fork beat the ggs until slightly frothy. Stir in milk and set aside.
  2. Stir apricot puree in the almond and spices
  3. Spread the apricot almond mixture evenly over half the bread slice sleaving 1/4 inch border uncovered on all edges and optional put your slices of Brie cheese. Top with the remaining bread slices and press down gentil to seal.
  4. Place 2 sandwiches in the egg mixture. Press gentil until evenly saturated on both sides Remove from the bowl and reapeat with the remaining 2 sandwiches.
  5. In a frying pan enough to hold all the sandwiches at once melt 2 tablespoons of butter over médium heat . Add the sándwiches and fry until the undersides are golden brown, about 2 minutes. Add the remaining 2 tablespoons of butter to the pan in several pieces distribuiting evenly, then slip the sándwiches with the spatula and fry until browned, about 2 minutes.
  6. Serve warm and dust with confectioner’s sugar over the top and spread with apricot jelly or Maple syrup.
