Beef Tenderloin With Lobster Stuffing Recipe

Ingredients
  • 1 6 lb beef tenderloin
  • 3 Cups of cooked lobster meat ,diced
  • 1 bunch green onions, finely sliced
  • 2 garlic cloves , minced
  • fine dry bread crumbs
  • melted butter
  • freshly ground pepper and salt to taste
  • EVOO
  • Cracked black pepper

Directions
  1. Using a sharp knife remove all the silver from the surface of the beef
  2. Cut the tenderloin lengthwise being careful not to cut all the way through(leave about 3/4 imch)
  3. Place the lobster meat into a mixing bowl and sprinkle with bread crumbs
  4. Add green onions, garlic, salt and pepper
  5. Add some melted butter, just enough to hold mixture together
  6. Fill the cavity of the tenderloin with the lobster mixture
  7. Tie roast with kitchen twine to keep lobster intact
  8. Rub the surface with the olive oil and roll the roast in the cracked pepper
  9. Place on rack in roasting pan and roast at 450 to an internal temperature of 150 to 160 for medium rare
  10. Let rest 10 - 15 minutes before carving in order for juices to redistribute through roast
