How to make it

  • Using a sharp knife remove all the silver from the surface of the beef
  • Cut the tenderloin lengthwise being careful not to cut all the way through(leave about 3/4 imch)
  • Place the lobster meat into a mixing bowl and sprinkle with bread crumbs
  • Add green onions, garlic, salt and pepper
  • Add some melted butter, just enough to hold mixture together
  • Fill the cavity of the tenderloin with the lobster mixture
  • Tie roast with kitchen twine to keep lobster intact
  • Rub the surface with the olive oil and roll the roast in the cracked pepper
  • Place on rack in roasting pan and roast at 450 to an internal temperature of 150 to 160 for medium rare
  • Let rest 10 - 15 minutes before carving in order for juices to redistribute through roast
