Beef Tenderloin With Lobster Stuffing

- 1 6 lb beef tenderloin shopping list
- 3 Cups of cooked lobster meat ,diced shopping list
- 1 bunch green onions, finely sliced shopping list
- 2 garlic cloves , minced shopping list
- fine dry bread crumbs shopping list
- melted butter shopping list
- freshly ground pepper and salt to taste shopping list
- EVOO shopping list
- cracked black pepper shopping list
How to make it
- Using a sharp knife remove all the silver from the surface of the beef
- Cut the tenderloin lengthwise being careful not to cut all the way through(leave about 3/4 imch)
- Place the lobster meat into a mixing bowl and sprinkle with bread crumbs
- Add green onions, garlic, salt and pepper
- Add some melted butter, just enough to hold mixture together
- Fill the cavity of the tenderloin with the lobster mixture
- Tie roast with kitchen twine to keep lobster intact
- Rub the surface with the olive oil and roll the roast in the cracked pepper
- Place on rack in roasting pan and roast at 450 to an internal temperature of 150 to 160 for medium rare
- Let rest 10 - 15 minutes before carving in order for juices to redistribute through roast
