This authentic spicy coconut milk by using homemade red curry paste with fresh sweet basil leaves and bamboo shoot. This dish can be made with beef, pork, fish and shimp.....Best serve with Jasmine rice.

Ingredients
  • 1 lb boneless chicken breast thinly sliced
  • 1 can bamboo shoots, sliced
  • 1/2 cup of green bean medium long sliced
  • 3 tbsp red curry paste (see Red Curry recipes)
  • 2 cups coconut milk
  • 2 fresh red chili, sliced diagonally
  • 1/2 cup Thai sweet basil leaves, torn
  • 2 tbsp fish sauce
  • 1 1/2 tsp palm sugar
  • Thai sweet basil leaves (bai horapah) for garnish

Directions
  1. Pour 1 cup of coconut milk into a wok. Bring to a boil over medium high heat, stirring constantly.
  2. Add the curry paste, stir until red oil comes to the surface. Add the chicken and cooked through.
  3. Add the remaining coconut milk, follow with the bamboo shoots. Season with fish sauce and sugar and bring back to a boil.
  4. Sprinkle with kaffir lime leaves, chilies, and sweet basil leaves. Turn off the heat.
  5. Arrange on a serving dish and garnish with sweet basil leaves before serving.
  6. Best serve with Jasmine rice..

I think you have a typo. Green beans are in the ingredient list, but not the directions ... and lime leaves are in the directions, but not in the ingredient list. :^)
