Ingredients

How to make it

  • Cut potatoes into 2 inch cubes and triangles
  • chop onions according to how big or small you like
  • wash mushrooms well, and slice into 1/2 inch pieces
  • cut sausage into 1 inch pieces
  • cover bottom of skillet with vegetable oil and heat
  • cover bottom of pot with vegetable oil and place mushrooms and onions in stirring occasionally and let simmer
  • place potatoes in skillet, season and cover. stirring occasionally until brown and soft (add more vegetable oil to skillet as needed)
  • once mushrooms and onions are soft and browned, add sausage stirring often
  • while sausage is cooking, scramble your eggs over your potatoes.
  • stir eggs until they are fluffy, and mixed evenly with potatoes
  • after everything is cooked mix together in skillet evenly, top with cheese and serve
  • Top with ketchup

    Wow, I'd get up early on a Saturday morning for this - and fall asleep about an hour later after eating way too much of it! Sounds wonderful!
