This is an easy dish that is full of flavor, and very filling. It is good for breakfast or dinner, and is great topped with ketchup.

Ingredients
  • 6-potatoes
  • 3-eggs
  • 1/2-package fresh mushrooms
  • 1/2-white onion
  • salt
  • pepper
  • 1-package chedderworsts (or sausage of choice)
  • Vegetable oil
  • 1-cup of shredded cheddar cheese
  • 1-large skillet with lid (if no lid, foil works even better)
  • 1-medium sized pot

Directions
  1. Cut potatoes into 2 inch cubes and triangles
  2. chop onions according to how big or small you like
  3. wash mushrooms well, and slice into 1/2 inch pieces
  4. cut sausage into 1 inch pieces
  5. cover bottom of skillet with vegetable oil and heat
  6. cover bottom of pot with vegetable oil and place mushrooms and onions in stirring occasionally and let simmer
  7. place potatoes in skillet, season and cover. stirring occasionally until brown and soft (add more vegetable oil to skillet as needed)
  8. once mushrooms and onions are soft and browned, add sausage stirring often
  9. while sausage is cooking, scramble your eggs over your potatoes.
  10. stir eggs until they are fluffy, and mixed evenly with potatoes
  11. after everything is cooked mix together in skillet evenly, top with cheese and serve
  12. Top with ketchup
