Corn And Tomato Salad With Cilantro Dressing

A flavorful and fresh salad that compliments any meal. Feel free to substitute chopped red or yellow bell peppers for the tomatoes in the salad; or try basil instead of cilantro in the dressing. Enjoy. From Bon Appétit.
Ingredients
- Combine in large bowl: shopping list
- 3 cups fresh corn kernels (cut from about 6 small ears of corn) - can use thawed frozen corn in a pinch shopping list
- 5 medium tomatoes, halved, seeded, chopped (I like Roma) shopping list
- 2/3 cup finely chopped red onion shopping list
- Optional: shopping list
- roasted Poblanos, cut into bite-size pieces shopping list

- In blender, purée until smooth: shopping list
- 1/4 cup olive oil shopping list
- 1/4 cup chopped fresh cilantro shopping list
- 2 tablespoons chopped fresh mint shopping list
- 2 tablespoons white wine vinegar shopping list
- 1 tablespoon fresh lime juice shopping list
- 2 teaspoons (packed) golden brown sugar shopping list
- 1 garlic clove shopping list
- salt and pepper shopping list
How to make it
- Just before serving, pour dressing over corn mixture and toss.
