I'll invite a few friends over to sit on the back deck to share good times,jokes and a little Jose Cuervo.These Peppers really set the atmosphere!!!

Ingredients
  • 12 Fresh Jumbo Jalapeño Peppers
  • 1 teaspoon liquid smoke
  • 8oz soften cream cheese
  • 8oz grated sharp cheddar cheese/Divided(buy the block,Not the bag)
  • Rotel tomatoes drained
  • 8 slices Thick sliced Bacon
  • 2 tablespoons Jalapeño Pepper Juice (from the jar peppers)
  • Roma Tomato Sliced Thin
  • Smoky Sweet Paprika

Directions
  1. Fry the bacon over medium heat until it is nice and crisp
  2. while your bacon is frying go ahead and mix together the cream cheese,liquid smoke,half the cheddar cheese,1/2 can Rotel tomatoes, and the jalapeño pepper juice.And crumble in the bacon when it is done.
  3. slice your peppers in half (from top to bottom) And remove all the seeds
  4. Stuff the peppers with your mixture and topping with the remaining cheddar cheese.Garnish with a thin tomato strip across the top and sprinkle smoky sweet paprika.(If it looks good then it Tastes good)!!
  5. Prepare grill for cooking.Fire is medium-hot (you can hold your hand 5 inches above rack for 3 to 4 seconds).
  6. Grill on lightly oiled top rack over medium-hot fire until the cheese is melted and the Peppers have a nice stripes across their bottoms!
  7. You can tell just how good these are by how close they were eaten "To The Top"

Oooh, I never thought about using Liquid Smoke in these darlins'...and I like the Rotel add here as well. I'll be trying these in the next day or so and I'll let you know how much I loved them. Can't wait... thanks!


Perfect! I am really looking forward to trying these - the liquid smoke adds a nice flavor, I'm sure (especially if you like that flavor as much as I do!)...cheesey, hot, bacon flavor, creamy - what more could I possibly want?!? Great idea - thanks chefjon.
