I didnt know what to make for supper tonight so i am going to marinate some pork and toss some eggplant and zucchini with some balsamic vinegar and onions.

  • For the Pork Marinade :
  • 1 sprig Rosemary
  • 3 Sage leaves ( Salvia)
  • 1 fresh Bay Leaf
  • 6 Black peppercorns
  • juice of 1/2 Blood Orange ( there are in season now here in Italy)
  • 1 tbs olive oil
  • 3 cloves garlic
  • 1/2 tbs Thyme
  • Juice of 1/2 lemon
  • 1/4 cup dry white wine
  • 2 pork tenderloins
  • Salt to taste

  • For the Eggplant and Zuccini Balsamic
  • 3 tbs of high quality balsamic vinegar
  • 1 eggplant
  • 1 Zucchini
  • 1 onion
  • 1/2 tbs oregano
  • 1 tbs paprika dolce powder ( sweet paprika)
  • 1/2 fresh tomoato
  • 3 tbs peccorino or parmesan cheese
  • 4 leaves of fresh basil
  • 1 tbs of olive oil
  • Salt to taste

Directions
  1. Combine ingredients 1-11 in a blender and make a nice thick paste.
  2. Marinate your pork tenderloins for about 2 hours
  3. Fire up your barbecue or oven broiler
  4. When the coals are nice and hot throw your loins on the grill ( not your own loins please, the pork :)
  5. Sear them nicely on each side for about 5 mins
  6. Baste them with your marinade and sear for another 2 mins

  8. For the Balsamic
  9. Cube your eggplant and Zucchini
  10. Cut your onions into thick slices
  11. In a frying pan add your olive oil and when very hot sear your eggplant, zucchini and onions for about 3 mins.
  12. Add your oregano, paprika dolce and fresh tomato to this. Cook for another 4 mins, until eggplant is cooked.
  13. thrown in your balsamic vinegar and fresh basil and cook for another min.
  14. Turn off heat and add your grated cheese
  15. Serve with your tenderloins and enjoy!

I've saved this recipe for next summer when eggplant and zuchinni are in season and the weather is warm for grilling. I have a small container of 12 year Balsamic that I bought when I was visiting Modena. I've served it on strawberries but don't know if this recipe is worthy of this treasure.
