Grilled Pork Tenderlion With Balsamic Eggplant And Zucchini

- For the pork marinade : shopping list
- 1 sprig rosemary shopping list
- 3 sage leaves ( Salvia) shopping list
- 1 fresh Bay Leaf shopping list
- 6 black peppercorns shopping list
- juice of 1/2 blood orange ( there are in season now here in Italy) shopping list
- 1 tbs olive oil shopping list
- 3 cloves garlic shopping list
- 1/2 tbs thyme shopping list
- juice of 1/2 lemon shopping list
- 1/4 cup dry white wine shopping list
- 2 pork tenderloins shopping list
- salt to taste shopping list

- For the eggplant and Zuccini Balsamic shopping list
- 3 tbs of high quality balsamic vinegar shopping list
- 1 eggplant shopping list
- 1 zucchini shopping list
- 1 onion shopping list
- 1/2 tbs oregano shopping list
- 1 tbs paprika dolce powder ( sweet paprika) shopping list
- 1/2 fresh tomoato shopping list
- 3 tbs peccorino or parmesan cheese shopping list
- 4 leaves of fresh basil shopping list
- 1 tbs of olive oil shopping list
- salt to taste shopping list
How to make it
- Combine ingredients 1-11 in a blender and make a nice thick paste.
- Marinate your pork tenderloins for about 2 hours
- Fire up your barbecue or oven broiler
- When the coals are nice and hot throw your loins on the grill ( not your own loins please, the pork :)
- Sear them nicely on each side for about 5 mins
- Baste them with your marinade and sear for another 2 mins

- For the Balsamic
- Cube your eggplant and Zucchini
- Cut your onions into thick slices
- In a frying pan add your olive oil and when very hot sear your eggplant, zucchini and onions for about 3 mins.
- Add your oregano, paprika dolce and fresh tomato to this. Cook for another 4 mins, until eggplant is cooked.
- thrown in your balsamic vinegar and fresh basil and cook for another min.
- Turn off heat and add your grated cheese
- Serve with your tenderloins and enjoy!
