Braised Chicken With Onion Garlic And Balsamic Vinegar Recipe
This recipe is from Gorurmet Magazine about 5 years ago. It can be a dish to impress but can also be made for any day of the week because it is very affordable. I love to serve this with rice because the gravey is soooo yummy.

  • 6 bacon slices (4 oz) , cut crosswise into 1/4- inch-wide strips
  • 1 (3 1/2-pound ) chicken, cut into 8 pieces---(I make this with boneless chicken thighs.)
  • 1 pound onions or shallots, thinly sliced----( I always use both)
  • 1 head garlic, cloves separated and peeled
  • 1/4 cup balsamic vinegar

Directions
  1. Cook bacon in a deep 12 inch skillet over moderatedly low heat, turning twice, until crisp, about 8 minutes.
  2. Transfer with a slotted spoon to paper towels to drain and reserve bacon fat in skillet.
  3. Brown chicken in bacon fat beginning with skin side down, may take 2 batches, turn after about 8 minutes, transfer browned chicken to a plate and pour off all but 2 tablespoons of fat from skillet.
  4. Lower heat, add onions to skillet and cook, covered, stirring occasionally, until soft and pale golden, about 10 minutes.
  5. Remove lid and cook onions, stirring, until deep golden, about 10 minutes more.
  6. Add garlic and 1 cup water to skillet and boil, stirring, 1 minute.
  7. Return chicken to skillet, turning pieces to coat, then arrange them skin sides up and gently simmer, covered until chicken is cooked through and garlic is tender, about 30 minutes.
  8. Transfer chicken with tongs to a serving dish. Add vinegar to sauce and boil, uncovered, mashing garlic with back of a spoon or a potato masher, until slightly thickened. Season sauce with salt and pepper and pour over chicken, then sprinlle with bacon.

Sounds great but I'm a little confused...#6 says to return chicken to skillet and the directions before that don't indicate adding the chicken...Am I missing something? Thanks Marriage...:)
