How to make it

  • Wash beans carefully and remove any debris. Do NOT presoak. Cover beans with water. Water should be about two inches over beans. Simmer and watch water to make sure beans remain covered and water level stays about one inch above beans. Cooking time will be about one hour until beans are tender and beginning to crack. Saute 1 large onion, diced until wilted with diced bacon, ham or sausage. Scoop about 1 1/2 cups cooked beans into onion mixture and mash. Return bean, onion, bacon mixture to bean pot and add small amount of hot water if needed. Add salt to taste and a few dashes of Louisiana Hot Sauce and about 1/2 cup chopped parsley. Continue cooking for about five minutes. Stir frequently to prevent sticking. Serve over hot rice.

I just made this! Although I did make it in a smaller potion and with canned white beans so I just added them (because a 15oz can -1 1/2 dried beans) to the "onion mixture". I also add diced green and red pepper, as well as garlic salt. It's delicious! Thanks so much for sharing. I had no idea what to make but I saw the can of beans and looked for something to make them with. Luckily I came across your recipe and that I had bacon in the freezer and onion, peppers, and white rice. I need to go grocery shopping and I thought I was going to eat something small and not really a meal for dinner, so thank you again! Made my night. =)

I've only had the red beans. I'll definitely have to give this one a try.
