Papparadelle Pasta With Mushroom And Pancetta

- 15 Champignon mushrooms shopping list
- 1/2 cup of Italian pancetta ( Affumicata) shopping list
- 6 leaves of basil shopping list
- 2 tbs of Italian soffritto ( grated carrots and celery) shopping list
- 1/2 pint of cherry tomatoes shopping list
- 1 small onion shopping list
- 2 ripe vine tomatoes shopping list
- 1 tbs of oregano shopping list
- 1 sprig of rosemary shopping list
- 1 tbs of chopped parsley shopping list
- 1/2 glass of dry white wine shopping list
- 5 cloves of garlic shopping list
- 3 tbs olive oil shopping list
- salt to taste shopping list
How to make it
- In a pan heat your olive oil and add the chopped garlic
- In about 2 mins add your finely chpped onions and soffritto
- When the onions are opaque add your pancetta, oregano and rosemary
- Stir for another min.
- Add your diced vine tomatoes, mushrooms and your whole cherry tomatoes
- Let it cook for about 8 mins on medium heat
- Add your wine and chopped basil leaves
- Cook for another 2 mins, turn off heat and add your parsley
- Cook your pasta according to instructions ( we used fresh Pappardelle)
- Drain and add to your sauce and cook for another 2 mins.
- Garnish with freshly grated Parmiggiano cheese
- Enjoy with nice white Tuscan wine
