Filet Mignon With Red Onion Marmalade And Blue Cheese

- red onion Marmalade shopping list
- ************************* shopping list
- 1 Tbs extra virgin olive oil shopping list
- 1 Tbs butter shopping list
- 1 large red onion, thinly sliced shopping list
- 1 garlic clove, minced shopping list
- 1 c. port wine shopping list
- 1 c. Burgundy wine (or any dry red) shopping list
- 1/2 c. fresh orange juice shopping list
- 1/3 c. honey shopping list
- 1/4 c. balsamic vinegar shopping list
- 1 tsp. orange zest shopping list
- ************************** shopping list
- 4-7 to 9 oz filet mignon shopping list
- 2 large garlic cloves cut in half shopping list
- salt and fresh cracked pepper shopping list
- 1 - 8 oz Block of blue cheese (I like Stilton or gorgonzola) shopping list
How to make it
- Leave Filets out on the counter to come to room temperature while you make the Marmalade
- *************************
- In a medium skillet over medium heat melt the butter in the oil
- Add the onion and cook until caramelized (about 25 minutes)
- Add garlic and stir for a minute
- Add port and simmer for 10 minutes, stirring
- Add remaining ingredients and reduce the liquid to a marmalade consistency (it will thicken some on cooling)
- Remove from heat, and let stand until cool to room temperature

- Once the Marmalade is done and cooling, rub both sides of the filet with the garlic cloves
- Salt lightly and pepper heavily
- Cook the filet either on the grill or in a cast iron skillet to desired temp (nothing over medium please)
- 145 degrees for medium rare
- 160 degrees for medium
- TIP: Remove steaks from heat 5-10 degrees short of your desired temp
- Place filets on a plate and cover with foil, let stand 10 minutes before assembling plate
- Slice the block of blue cheese into four equal slabs
- On dinner plate, place a bed of the Red Onion Marmalade, place a filet on Marmalade
- Drizzle with any dripping from the plate on which the filets rested
- Top with a slab of the blue cheese and let stand a minute or two until the cheese softens
