Filet Mignon With Red Onion Marmalade And Blue Cheese Recipe
This is the best way to eat a Filet Mignon. I had it in a restaurant and went straight home and found a recipe for the Red Onion Marmalade (stolen from Scearley) that is a perfect compliment to the beef and the Blue Cheese on top.

Ingredients
  • Red Onion Marmalade
  • *************************
  • 1 Tbs extra virgin olive oil
  • 1 Tbs butter
  • 1 large red onion, thinly sliced
  • 1 garlic clove, minced
  • 1 c. port wine
  • 1 c. burgundy wine (or any dry red)
  • 1/2 c. fresh orange juice
  • 1/3 c. honey
  • 1/4 c. balsamic vinegar
  • 1 tsp. orange zest
  • **************************
  • 4-7 to 9 oz Filet Mignon
  • 2 large garlic cloves cut in half
  • Salt and fresh cracked pepper
  • 1 - 8 oz Block of Blue Cheese (I like Stilton or Gorgonzola)

Directions
  1. Leave Filets out on the counter to come to room temperature while you make the Marmalade
  2. *************************
  3. In a medium skillet over medium heat melt the butter in the oil
  4. Add the onion and cook until caramelized (about 25 minutes)
  5. Add garlic and stir for a minute
  6. Add port and simmer for 10 minutes, stirring
  7. Add remaining ingredients and reduce the liquid to a marmalade consistency (it will thicken some on cooling)
  8. Remove from heat, and let stand until cool to room temperature

  10. Once the Marmalade is done and cooling, rub both sides of the filet with the garlic cloves
  11. Salt lightly and pepper heavily
  12. Cook the filet either on the grill or in a cast iron skillet to desired temp (nothing over medium please)
  13. 145 degrees for medium rare
  14. 160 degrees for medium
  15. TIP: Remove steaks from heat 5-10 degrees short of your desired temp
  16. Place filets on a plate and cover with foil, let stand 10 minutes before assembling plate
  17. Slice the block of blue cheese into four equal slabs
  18. On dinner plate, place a bed of the Red Onion Marmalade, place a filet on Marmalade
  19. Drizzle with any dripping from the plate on which the filets rested
  20. Top with a slab of the blue cheese and let stand a minute or two until the cheese softens
  21. DEVOUR!

This is a fabulous recipe. I found the marmalade recipe on this site (courtesy of scearly) and demanded HOTPAD make it for me as he had it at a local restaurant and only shared ONE BITE with me. Several friends requested it for their birthday dinner.
