How to make it

  • In a sauce pan, boil water to cook pasta. Cook the pasta to al dente (depending on the pasta, approximately 7-8 minutes)
  • Do not drain.
  • While the pasta is cooking, pour olive oil in a separate frying pan (large enough to hold the cooked pasta)
  • Add peeled garlic and rosemary sprigs.
  • Saute at low-medium heat until the garlic is golden and the rosemary begins to brown.
  • Be careful not to burn the garlic or the rosemary.
  • Using tongs or a slotted spoon, remove the garlic and rosemary.
  • Using tongs, transfer pasta into the hot roasted garlic rosemary oil.
  • Toss with the tongs until the pasta is well coated.
  • (If desired, add a small amount of pasta water to the fry pan to make a light sauce.)
  • Remember, timing is everything: You wait for the pasta, pasta does not wait for you!
  • Sprinkle with sea salt and coarse black pepper.
  • Enjoy!
