Penne Mascarpone With Grilled Chicken Recipe

I just recently put this on my menu at the resataurant and it is a hit. Full of flavor and easy to do once prepped!

Ingredients
- 1 grilled chicken breast sliced
- 5 pepperoncini sliced
- 1 cup cremini mushroom
- 1 cup roasted tomatoes
- 1/2 cup caper berries cut in half
- 3/4 cup white wine (chablis)
- 1/2 cup fresh basil chiffonade
- 1 cup mascarpone cheese
- s and p to taste
Directions
- large hot saute pan with a little olive oil
- add grilled chicken, saute 1 minute
- add cremini mushrooms
- add roasted tomatoes
- add caper berries
- saute for 1 minute
- deglaze with white wine for 30 seconds
- add mascarpone cheese
- s and p to taste

Yup, added to mine, too, thanks to jj, above! :) Sounds great...as for when to add the peppers, I'm going to assume it's with the mushrooms and peppers...ish...at least that's when I'm gonna add 'em. ;)
