I am from the liberties in Dublin and we would not cook coddle like this. We boiled it in a pot and in some households there was only an open fire to cook or a small stove, so an oven is never used for this dish. The only seasoning available to poorer households was salt, and the ingredients for coddle were just rashers of bacon, a pork kidney, sausages and water, if you had a bit of chicken stock left over then you used this. It is also known in Dublin as a breakfast, it warmed you up and might well be the only hot meal you received all day, and if you were lucky to have a range with an oven then you had homemade soda bread to soak it up.
