Crispy Baked Buffalo Chicken Recipe
I was in search of a healthier alternative to buffalo wings that would satisfy my craving- this recipe did the job! I thought it was delicious, and the kids loved it too.

Ingredients
  • 4 boneless skinless chicken breasts
  • 1/2 cup franks red hot buffalo sauce or regular franks red hot (I used 1/4 cup of each)
  • 1 cup and 1/2 cup flour
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tsp paprika
  • 2 tsp garlic powder
  • 4 cups ranch potato chips (I used Cape Cod brand...mmm) You could try 1/2 packet of ranch dressing mix added to 1/2 bag regular chips if needed
  • 1 egg- this is for an egg wash- I have used plain milk when out of eggs :)
  • 1/4 cup milk
  • 1 tsp Tabasco sauce

Directions
  1. Trim fat from chicken and rinse- pat dry
  2. Marinate chicken in a ziplock bag with franks red hot sauce for 2-3 hours in fridge, I also sometime add 2 tbsp taco seasoning for more flavor
  3. Preheat oven to 400 and lightly oil glass baking dish
  4. Combine 1 cup flour, salt and pepper
  5. Crush potato chips
  6. In a different bowl or bag, combine remaining 1/2 cup flour, crushed chips, paprika and garlic powder
  7. Make an egg wash out of the egg, milk and Tabasco sauce
  8. Remove chicken from marinade and wipe excess sauce as you removeit from the marinade bag, discard marinade
  9. Dredge chicken breast in salt+pepper flour
  10. Dip in egg wash
  11. Toss in potato chips mixture and lay in baking dish
  12. Repeat for each chicken breast
  13. Bake in oven for 25-30 minutes, or until outside is light brown + crispy and juices run clear
  14. I topped each one with a slice of pepper-jack cheese in the last 5 minutes and served with extra franks red hot on the side
  15. YUM!

You've been reading my mind. My hubby and I recently agreed that those little chicken wings have a lot of fat and we need to cut back a bit. This recipe looks lovely. Thank you for sharing.
