Crispy Baked Buffalo Chicken

- 4 boneless skinless chicken breasts shopping list
- 1/2 cup franks red hot buffalo sauce or regular franks red hot (I used 1/4 cup of each) shopping list
- 1 cup and 1/2 cup flour shopping list
- 1 tsp pepper shopping list
- 1 tsp salt shopping list
- 1 tsp paprika shopping list
- 2 tsp garlic powder shopping list
- 4 cups ranch potato chips (I used Cape cod brand...mmm) You could try 1/2 packet of ranch dressing mix added to 1/2 bag regular chips if needed shopping list
- 1 egg- this is for an egg wash- I have used plain milk when out of eggs :) shopping list
- 1/4 cup milk shopping list
- 1 tsp Tabasco sauce shopping list
How to make it
- Trim fat from chicken and rinse- pat dry
- Marinate chicken in a ziplock bag with franks red hot sauce for 2-3 hours in fridge, I also sometime add 2 tbsp taco seasoning for more flavor
- Preheat oven to 400 and lightly oil glass baking dish
- Combine 1 cup flour, salt and pepper
- Crush potato chips
- In a different bowl or bag, combine remaining 1/2 cup flour, crushed chips, paprika and garlic powder
- Make an egg wash out of the egg, milk and Tabasco sauce
- Remove chicken from marinade and wipe excess sauce as you removeit from the marinade bag, discard marinade
- Dredge chicken breast in salt+pepper flour
- Dip in egg wash
- Toss in potato chips mixture and lay in baking dish
- Repeat for each chicken breast
- Bake in oven for 25-30 minutes, or until outside is light brown + crispy and juices run clear
- I topped each one with a slice of pepper-jack cheese in the last 5 minutes and served with extra franks red hot on the side

You've been reading my mind. My hubby and I recently agreed that those little chicken wings have a lot of fat and we need to cut back a bit. This recipe looks lovely. Thank you for sharing.
