This jerk marinade never fails to get attention. Take care to use gloves when working with the habaneros or you will have sore fingers.

Ingredients
  • 1 tbs. allspice, jamaican if you can get it
  • 1 tbs. thyme
  • 1 1/2 tsp. cayenne pepper
  • 1 1/2 tsp. sage
  • 3/4 tsp. nutmeg
  • 3/4 tsp. cinnamon
  • 2 tbs. salt
  • 2 tbs. garlic powder
  • 1 tbs. sugar
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 3/4 cup white vinegar
  • 1/2 cup orange juice
  • 1 lime, juiced
  • 1 seeded and chopped habanero pepper
  • 3 green onions chopped
  • 4 skinless boneless chicken breasts

Directions
  1. Combine dry ingredients in bowl
  2. Whisk in wet ingredients, pepper, and onion
  3. Marinate chicken 1 hour or more, I marinate overnight if I can
  4. Grill chicken until done
  5. Boil leftover marinade and serve over chicken
