Been on an avocado binge here lately. Found this on Chef2chef. It's great over quesadillas, enchiladas, etc... Very easy and very flavorful.

Ingredients
  • 2 ripe Hass avocados, peeled, pitted and cut/diced into 1/2-inch cubes/sections
  • 1/2 cup chicken broth
  • 2 roasted jalapeños, seeded and julienned
  • 1 clove roasted garlic
  • 1 teaspoon lime juice
  • salt and white pepper to taste

Directions
  1. In a food processor: combine avocado, chicken broth, jalapeños and garlic, pulse until puréed. Add salt and pepper to taste.
  2. Pass through a fine mesh strainer and thin with a little water or broth if the coulis is too thick.
  3. Excellent served warm
  4. Makes 2 cups.
