	easy sweet potato pie

Ingredients

2 cups cooked or canned sweet potatoes

1 1/2 cups sugar

1 teaspoon cinnamon

1/8 teaspoon nutmeg (optional)

1/2 stick butter or margarine

3 eggs, beaten

1 teaspoon vanilla

1 cup evaporated milk

1 prepared pie crust, not baked

Directions

Preheat oven to 350 degrees

Prepared crust in a pie dish

In a large bowl, beat potatoes until semi-smooth

Melt butter and add to potatoes

Add all other ingredients and Mix on medium until smooth

Bake for one hour

Cool on rack for 20 minutes.

Serve with cool whip or ice cream

This recipe will make 2 small pies but I usually just make one big pie

OH MY GOSH!! I made this today and it is out of this world. I LOVED it. It was fantastic! It made 2 pies. I was thinking of taking one to work but now that I have had a slice, NO WAY am I taking that to work LOL We are going to eat it! Someone asked how it compared to pumpkin pie, personally I hate pumpkin pie but LOVE sweet potato pie. Sweet potato is sweet and creamy where as pumpkin is, I don't know, like spice bitter.
