Zucchini Provencal

- 2 tablespoons butter shopping list
- 3 cloves garlic chopped shopping list
- 1-1/2 cups diced white onion shopping list
- 2-1/2 pounds zucchini cut into 1/4 inch slices shopping list
- 2 teaspoons dried basil leaves shopping list
- 1 large tomato seeded and diced shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Heat butter in large nonstick skillet over medium heat.
- Add garlic and onion then sauté until softened about 5 minutes.
- Stir in zucchini and basil then cook covered 12 minutes stirring often.
- Add tomato, salt and pepper.
- Cook stirring constantly for 3 minutes.
