Fruited Basmati Rice with Garlic and Almonds

- 2c. basmati rice shopping list
- 4T. olive oil shopping list
- 1 onion finely chopped shopping list
- 2 lrg. cloves of garlic shopping list
- 31/4c. chicken stock shopping list
- 1/2c. slivered almonds shopping list
- 1c. dried apricots chopped shopping list
- 1/2c. raisins shopping list
- 1t. salt shopping list
- pepper to taste shopping list
- 1/2c. boiling water shopping list
How to make it
- Rinse rice, place rice in a bowl and cover with cold water, soak 30 min.
- In a sauce pan add olive oil and onion and saute till golden brown
- Add garlic and saute 1 min.
- Add drained rice stirring often cooking for 5 min.
- Pour stock into pan and bring to a boil
- Add salt and pepper to taste
- Simmer 20 min. or until all liquid is absorbed, let rice sit for 10 min.
- In a bowl combine fruit and boiling water and soak for 5 min.
- Strain fruit and add to rice along with the almonds
- Enjoy!

Maiking this again as i write. it's fabulous! loved it for company but tonight i'm making just for 2 and cutting the recipe in 1/2. great job.
