This is a spread my Mother made when I was a child. The ingredients may seem to be a strange combination but everyone likes it when they try it. It 's a favorite at work and at Church. It's great for showers, brunches or Family get togethers.

Ingredients
  • 2 8 oz packages of cream cheese (room temp)
  • 1 large can of crushed pineapple
  • 4 oz sliced olives (I slice my own, the pre-sliced are too salty)

Directions
  1. Place cream cheese in electric mixer and beat until smooth.
  2. Drain pineapple and squeeze to remove juice. Add to cream cheese and beat until mixed.
  3. Slice olives and mix by hand.
  4. Serve with Ritz crackers.
  5. To use for finger sandwiches add 1/2 cup of pecans.

Oh, this spread is so good - the combined flavors are outstanding! We used to eat these little tea sandwiches at bridal and baby showers and someone always made some of the pineapple spread variety. Another classic/keeper - another 5 from me. Great share, Ferri - thanks so much...

I'm not sure if I'll be able to put the olives in or not! But this reminds me of the pineapple spread you buy in those little jars.

Great recipe! Yes, I've had those little finger sandwiches too, long long ago. But just as a spread on crackers, it's great too!


Some of my fav infgredients. I hope you don't mind that I added it to the olive group.
