How to make it

  • Crush garlic into a paste with salt. Add Lemon and dried Mint. Combine in jar with oil and shake until emulsified.
  • Toss vegetables together and chill. Dress with Lemon, oil and garlic. Top with Olives and fresh Mint before serving. Note: If doing ahead, do not add tomatoes until ready to serve.

    The last time I made this for a family get together, I topped it with toasted pine nuts along with the olives and mint. Everyone loved the addition..
