One of mom's favorite preps, she notes on her recipe card that it was shown on NBC, the Chicken Cookbook, year is indeterminate. I love tarragon and citrus. This rocks in my book.

Ingredients
  • 1 broiler-fryer cut up in 8 pieces
  • 1/2 cup of softened butter, not margarine
  • 1 1/2 tablespoons of fresh tarragon
  • 1/3 cup of onion slivered
  • 1 cup of dry white vermouth
  • 1/2 cup of flour, seasoned with 1 tsp of salt, 1/4 tsp of pepper
  • 3/4 tsp of lemon pepper seasoning
  • 1 tbsp of Parmesan cheese, grated, not shredded
  • 1 tbsp of grated orange peel (use that rasp)

Directions
  1. Mix the soft butter with the tarragon. Divide in half. Chill
  2. Spread half the seasoned butter over the bottom of a large
  3. shallow baking pan.
  4. Sprinkle onion slices over the butter.
  5. Add vermouth.
  6. Dredge chicken pieces in seasoned flour, coat well.
  7. Place chicken skin side up over onion, vermouth butter mix.
  8. Dot with reserved half of tarragon butter.
  9. Sprinkle with lemon pepper seasoning.
  10. Bake uncovered in preheated 350 degree oven for 40 minutes.
  11. Place chicken on platter. and sprinkle with parmesan cheese and orange rind.
  12. Bring pan juices to a boil for a minute and serve on the side with the chicken.
  13. We like green petite peas and mashed potatoes as our sides.
