A unique potato salad that is great any time!

Ingredients
  • 2.5 lb small Yukon god potatoes, or Red new potatoes, cut into wedges
  • Vegetable cooking spray
  • 1/4 c fresh squeezed lemon juice
  • 4 garlic cloves, minced
  • 1 (1 oz) pkg fresh baskil, chopped, about 1/3 c
  • 1 T Dijon mustard
  • 1 t salt
  • 1/2 t freshly ground black pepper
  • 2/3 c olive oil
  • 1/2 med red onion, sliced
  • 1 (10 oz) pkg fresh spinach
  • 8 thick cut peppered bacon slices, cooked and crmbled

Directions
  1. Arrange potato wedges in an even layer in a lightly greased broiler pan
  2. Coat wedges with cooking spray
  3. Bake at 475 20-25 minutes, or until tender and golden
  4. Whisk together lemon juice, and next 5 ingredients; whisk in oil in a slow, steady stream
  5. Gently toss potatoes, onion, and 1/2 c lemon juice mixture
  6. Arrange spinach evenly on serving platter or in individual bowls
  7. Drizzle with remaining lemon juic mixture
  8. Top with potato mixture
  9. Sprinkle with bacon
  10. *This is good with the Mesquite Grilled Chicken with White Barbeque Sauce (posted in my recipes)

I believe this is even "diet legal" Looks great! Of course us calorie counters are cheating down to turkey bacon which definitely isn't as yummy as the real thing -- but it would work! Outstanding -- bookmarked.
