How to make it

  • Arrange potato wedges in an even layer in a lightly greased broiler pan
  • Coat wedges with cooking spray
  • Bake at 475 20-25 minutes, or until tender and golden
  • Whisk together lemon juice, and next 5 ingredients; whisk in oil in a slow, steady stream
  • Gently toss potatoes, onion, and 1/2 c lemon juice mixture
  • Arrange spinach evenly on serving platter or in individual bowls
  • Drizzle with remaining lemon juic mixture
  • Top with potato mixture
  • Sprinkle with bacon

    I believe this is even "diet legal" Looks great! Of course us calorie counters are cheating down to turkey bacon which definitely isn't as yummy as the real thing -- but it would work! Outstanding -- bookmarked.
