How to make it

  • Melt 1/3rd butter for topping and pour in the bottom of a rectangle baking pan. Add the brown sugar, vanilla, rum, and cinnamon and stir with a fork. Add sliced bananas.
  • In a large bowl mix the cake mix, eggs, melted stick of butter and milk with an electric mixer, about 3 minutes. Batter should be smooth. Pour over banana topping mixture and bake at 350 deg for 40-45 min.
  • Run a knife along the edges and invert onto serving plate. Cake should release, if not let it rest until it does.
  • Serve warm with ice cream or whipped cream.
  • This can also be made in a large cast iron skillet.

    I stumbled upon your recipe last summer, made the cake, and posted this link to my Facebook page. Not only did I love it, but so did my mother and my cousin (who both ran out immediately to get ingredients to make it). What a great recipe-- especially since I've never seen anything like this before. I've made this a couple times since summer, and everyone always loves it:-)

    Love, Love, LOVE this! Went to New Orleans some years back before all of the tragic events, and was honored to be able to first hand experience Bananas Forster at Pat O'Briens??? Is that where it first became famous, or do I have the wrong restaurant? Which ever restaurant has that claim to fame,that's the one I had it in. Oh yeah, I also experienced "Cafe' Du monde for cafe' au lait, and beignets! Awesome! On the other hand of coarse, a few nights bar hopping through The French Quarter... Bourbon Street etc... Ok, Wow! Now THAT was an experience I won't soon forget. I'd love to visit once a year if I had the time!
