How to make it

  • Combine marinade ingredients. Rinse pork. Make shallow slits on both sides of the tenderloin. Marinate in a sealed plastic bag for 8 hours.
  • Prepare grill for indirect heat. Bring tenderloin out of refrigerator to get to room temperature. Make sure grill is well oiled. Add smoking chips when fire is ready. Wait a minute until they get smoking.
  • Grill tenderloin 3 minutes per side over the direct part of the fire to get a char on the meat. Remove to cooler indirect part of the fire. Roast 4 minutes per side. Heat honey in microwave until it gets runny. Spoon over pork, cook a minute more. Turn and baste the other side. Cook 30 seconds more. Pork should be medium or medium rare.
  • Let sit for 10 minutes and then cut into thick slices.
  • Serves 4. But make extra as this makes great sandwiches.

    I am a big Char Siu fan (one of my all-time favorites) and I have no doubt that adding mesquite to the party would bring great results.
