Mesquite-Grilled Char Siu Pork Tenderloin Recipe

Ingredients
  • MESQUITE GRILLED CHAR SIU PORK TENDERLOIN
  • 1 pork tenderloin, 2 lbs
  • Marinade for Pork:
  • 3 T. Hoisin sauce
  • 3 T. tempura sauce
  • 3 T. creamed sherry
  • 1 T. sugar or Splenda
  • 1 t. crushed garlic
  • 1 t. crushed garlic
  • ½ t. salt
  • 2 T. chili sesame or macadamia nut oil
  • 3 T. honey
  • 1 cup mesquite smoking chips, soaked 2 hours

Directions
  1. Combine marinade ingredients. Rinse pork. Make shallow slits on both sides of the tenderloin. Marinate in a sealed plastic bag for 8 hours.
  2. Prepare grill for indirect heat. Bring tenderloin out of refrigerator to get to room temperature. Make sure grill is well oiled. Add smoking chips when fire is ready. Wait a minute until they get smoking.
  3. Grill tenderloin 3 minutes per side over the direct part of the fire to get a char on the meat. Remove to cooler indirect part of the fire. Roast 4 minutes per side. Heat honey in microwave until it gets runny. Spoon over pork, cook a minute more. Turn and baste the other side. Cook 30 seconds more. Pork should be medium or medium rare.
  4. Let sit for 10 minutes and then cut into thick slices.
  5. Serves 4. But make extra as this makes great sandwiches.

I am a big Char Siu fan (one of my all-time favorites) and I have no doubt that adding mesquite to the party would bring great results.
