This is my favorite"Spanish Rice" recipe and I make it often. I usually add more bacon. It is from "The Official Fajita Cookbook"

I'm with you...add more bacon. I often cook my rice in chicken broth for added flavor...learned that from one of my Latino friends. Good post!
