  • For the dough
  • ½ kilo self-raising flour
  • 1 teaspoonful baking powder
  • ½ glass of olive oil
  • 1 - 1 1/2 glasses of fresh orange juice
  • 1 spoonful of wine vinegar
  • For the filling
  • 2 1/2 - 3 glasses black Kalamata olives, (about ½ kilo) washed, rinsed, stoned and chopped
  • 1 small onion or 3 – 4 fresh spring onions finely chopped
  • Dried or fresh mint (about 2 – 3 spoonfuls)
  • 1/2 cup of fresh cilantro, finely chopped
  • 3 tablespoons olive oil
  • Sesame seeds
  • 1 egg to glaze (opional)

Directions
  1. To make the filling, mix the olives with cilantro, mint and onion.
  2. Follow instruction for making the dough, as in my recipe “Dough for pies” but insert orange juice instead of water and after rolling out phyllo with pasta machine and cut 8 cm x 8 cm pieces.
  3. Place each piece of phyllo in the sesame seeds and add some filling on one side and make a roll. Press edges with a fork to seal the phyllo.
  4. Line a baking tin with parchment paper and slightly grease it. Place them in the tin next to each other and brush them with one egg lightly beaten.
  5. Bake in a preheated oven (180ο C) for 35-45 minutes or until golden brown.

This sounds perfect! But how long will they keep (I live alone and can't eat that many in a month!)?

Hi delia. Make half the recipe, but also if they are still too much, just wrap them in plastic bags or kitchen membrane (the quantity you need to eat each time) you can preserve them for a very long time in the freezer and you just thaw some each time you feel you want to eat some. They are just as good as fresh.


Hi! Any suggestions if I don't want to tackle the homemade dough - would using store-bought dough be horrible?!

Hi C3max. Frankly I have never tried it with store-bought dough and I don't know to what kind you refer to. Is it puff pastry, is it fyllo or pilsbury? I can't really tell you but if you try it with puff pastry or fyllo, I don't think it will be bad but totally different taste. Happy Easter and good luck with it.
