  • 4 cups chicken or vegetable stock
  • 1 cup stale bread crumbs of crusty bread
  • 2 eggs, beaten
  • 1/8 teaspoon cardamom
  • pinch saffron
  • 1/2 teaspoon salt
  • 2 Tablespoons lemon juice

Directions
  1. Bring the stock to a boil, then reduce to low. Beat together the breadcrumbs, eggs, cardomom, saffron, and salt, then pour into the stock, off the heat, and beat. Return to a simmer for a few minutes to thicken. Stir in lemon juice and ladle into bowls.
