Aussie Breakfast Bread Recipe

Ingredients

1/2 cup rolled oats

1/4 cup milk (can use skim)

2 cups flour (can use whole wheat)

1 teaspoon baking powder

1/2 cup dried cherries

1/3 cup dried apple, chopped

1/3 cup light brown sugar

1 teaspoon cinnamon

3 Tablespoons honey

1 egg lightly beaten

1/4 cup sliced or chopped almonds (plus a little extra to sprinkle on top)

Directions

Put milk and oats in bowl. Soak for 30 minutes.

Preheat oven to 350 degrees.

Lightly grease and line loaf pan with parchment or wax paper.

Sift flour and baking soda in a bowl.

Stir in oat mixture, dried fruits, sugar, cinnamon, honey, egg and almonds and mix just until combined well.

Spoon mixture into pan, level the top and sprinkle with almonds.

Bake for 45 minutes or till loaf is cooked through and the top is golden.

Cool in pan 10 minutes, transfer to rack.

****** Serving idea: slice, toast and serve with cream cheese and honey.
