How to make it

  • Put milk and oats in bowl. Soak for 30 minutes.
  • Preheat oven to 350 degrees.
  • Lightly grease and line loaf pan with parchment or wax paper.
  • Sift flour and baking soda in a bowl.
  • Stir in oat mixture, dried fruits, sugar, cinnamon, honey, egg and almonds and mix just until combined well.
  • Spoon mixture into pan, level the top and sprinkle with almonds.
  • Bake for 45 minutes or till loaf is cooked through and the top is golden.
  • Cool in pan 10 minutes, transfer to rack.
  • ****** Serving idea: slice, toast and serve with cream cheese and honey.
