Beer Chicken Not Beer Butt Chicken

- 1 12 oz can/bottle beer...take yer pick! shopping list
- 4 boneless chicken breast halves shopping list
- 2 T butter shopping list
- 1 c sliced mushrooms shopping list
- 1 clove garlic, minced (of course garlic!) shopping list
- 1 T grated parmesan cheese shopping list
How to make it
- Pour 1/2 of the beer in glass dish or bowl. Add chicken breasts, toss to coat, cover and refrigerate for 30 minutes to marinate.
- Melt 1 T butter in a large skillet over medium heat. Saute garlic, add mushrooms and saute for 5 - 10 minutes or until cooked; remove from skillet and reserve.
- Melt remaining 1 T butter in the skillet over med high heat and add chicken. Saute 5 - 6 minutes on each side or until cooked through and juices run clear. Reduce heat to low, pour remaining beer over chicken and add reserved mushrooms/garlic.
- Cover and let simmer another 5 - 10 minutes.
- Sprinkle with parmesan cheese and serve with cooked rice or pasta
- Garnish with fresh parsley.
