Ingredients
  • 3 slices bacon, cut into 1/2 inch pieces
  • 3 lbs. swiss chard, stemmed and thinly sliced
  • 3/4 cup chick stock or broth
  • 1 1/2 tsp. cornstarch
  • 3 cloves garlic, minced
  • 1 tsp. dried basil, crushed
  • Salt and pepper to taste

Directions
  1. Cook bacon in small skillet until crisp
  2. Transfer bacon to paper towels using slotted spoon
  3. Drain bacon drippings
  4. In pot, steam swiss chard until just tender, about 3 minutes
  5. In large skillet, combine stock, cornstarch, garlic, and basil
  6. Whisk until cornstarch dissolves
  7. Bring to boil
  8. Add swiss chard and bacon
  9. Toss to coat
  10. Salt and pepper

Very good. I skipped the basil. Just kept the chard, bacon, garlic and a pinch of red pepper flakes on my plate(no red pepper for Fred). It was just delicious. Everything is better with bacon. Steaming the chard kept it vibrant and making the sauce separate kept it from getting overdone. I wouldn't do it any other way to keep the chard so nice.
