Ingredients
  • Salad:
  • 3-4 cups fresh lettuce, bib, butter, romaine, spinach or combo
  • 1-2 cups grilled or steamed asparagus spears
  • Thin sliced cold grilled beef
  • Dressing:
  • 1/3 cup soy
  • 1/4 cup rice wine vinegar
  • 3 Tbs quality sesame oil (Trader Joe's)
  • 2 Tbs fresh grated ginger
  • 1-2 Tbs sugar
  • S&P to taste

Directions
  1. In a big flat bowl combine the lettuce, crispy cooked asparagus, and beef. Toss with dressing just before serving.
  2. Options: Add or substitute leftover pasta (as pictured here) toasted sesame seeds, crispy noodles, toasted nuts, tomatoes, boiled eggs, or any green veggies you love or have on hand.
