Ingredients

Salad:

3-4 cups fresh lettuce, bib, butter, romaine, spinach or combo

1-2 cups grilled or steamed asparagus spears

Thin sliced cold grilled beef

Dressing:

1/3 cup soy

1/4 cup rice wine vinegar

3 Tbs quality sesame oil (Trader Joe's)

2 Tbs fresh grated ginger

1-2 Tbs sugar

S&P to taste

Directions

In a big flat bowl combine the lettuce, crispy cooked asparagus, and beef. Toss with dressing just before serving.

Options: Add or substitute leftover pasta (as pictured here) toasted sesame seeds, crispy noodles, toasted nuts, tomatoes, boiled eggs, or any green veggies you love or have on hand.
