Given to me by a coworker who brought this casserole to a breakfast at work.

Ingredients
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 stick butter
  • 10 eggs
  • 16 oz shredded Monterrey Jack cheese
  • 16 oz cottage cheese
  • 4 oz can chopped mild green chiles
  • 2 oz jar pimientos, drained

Directions
  1. Preheat oven to 325, spray a 13x9 dish with cooking spray.
  2. Combine flour, baking powder and salt and mix well.
  3. Melt butter.
  4. Beat eggs in a large bowl at high speed of an electric mixer.
  5. Add flour mixture to eggs.
  6. Beat until smooth.
  7. Stir in the butter, cheeses, chiles and pimientos.
  8. Pour into dish and bake 35 minutes.
  9. Let stand 5 minutes.
  10. Cut into squares and serve immediately.
