Delicious orzo recipe that I've adapted from a recipe by Graham Kerr.

Ingredients
  • 1 Tbs Olive Oil
  • 3 cloves Garlic, minced
  • 2-3 tsp fresh Rosemary, finely chopped
  • 28 oz Chicken Broth
  • 1 1/2 cups uncooked Orzo
  • 2 Tbs Butter

Directions
  1. In a heavy sauce pan, heat the olive oil. Cook the garlic for about 2 minutes, add the rosemary and cook a minute more.
  2. Add broth to pan, then orzo. Heat to a boil then reduce heat to med-low and cook for 25 minutes, till orzo is tender and most of excess liquid is absorbed.. Stirring frequently. Mixture will lightly boil and slowly thicken and orzo expands, like cooking risotto. Keep extra broth (or water) handy to add a little at a time if it is cooking off too quickly and orzo isn't tender yet.
  3. During last 5 minutes put butter in and continue to stir.
  4. When orzo is tender, it is done, serve immediately.

YUMMY!!!! Sounds like it would make a good stuffing for chicken!!


It was a fabulous side to the Cornish Game Hens I fixed for Easter dinner :)


Haven't converted my family to orzo yet, but this might be the dish to try. YUM.


I tried this recipe and it was sooooo good! I used way more rosemary than 2-3 tsp. I thought it was really heavy, I was surprised.
