How to make it

  • In a heavy sauce pan, heat the olive oil. Cook the garlic for about 2 minutes, add the rosemary and cook a minute more.
  • Add broth to pan, then orzo. Heat to a boil then reduce heat to med-low and cook for 25 minutes, till orzo is tender and most of excess liquid is absorbed.. Stirring frequently. Mixture will lightly boil and slowly thicken and orzo expands, like cooking risotto. Keep extra broth (or water) handy to add a little at a time if it is cooking off too quickly and orzo isn't tender yet.
  • During last 5 minutes put butter in and continue to stir.
  • When orzo is tender, it is done, serve immediately.

    This is delicious! I cut the recipe in half. I thought it would need salt as I used less sodium chicken broth but it didn't! I liked the pan method of cooking orzo. Mine only took about 20 minutes to cook. Added a thread in IMI on 6/11/16.

    I tried this recipe and it was sooooo good! I used way more rosemary than 2-3 tsp. I thought it was really heavy, I was surprised.
