Ingredients

1 lb. monterey jack or provolone cheese, cut into chunks

1/2 cup olive oil

1 1/2 tsp. grated lemon rind

1/4 cup lemon juice, fresh

3 cloves garlic, minced

1 1/2 tsp. tri color peppercorns, crushed

*1 tsp. fennel for provolone cheese

* 1 tsp. cumin for monterey jack

(I've also used crushed mustard seeds with both cheeses)

Directions

Mix all ingredients except the cheese

Add cheese to mixture

Let set for a couple hoursin fridge for flavors to marry

Serve at room temperature
