Pineapple Bechamel With Bonito Poached Salmon And Spinach

- 2 Wild Caught salmon fillets shopping list
- 1 Package Organic baby spinach steamed lightly, just until it wilts shopping list
- 1/2 spanish onion chopped shopping list
- 1/2 cup Bonito Flakes shopping list
- 1 strip Dried Norri shopping list
- 1 tablespoon mushroom powder shopping list
- 1cup Nantucket Nector, pineapple, orange,Mango juice shopping list
- 1/2 cup vanilla soy milk shopping list
- 3 tablespoons sweet butter shopping list
- 3 Tablespoons flour shopping list
- 4 pineapple rings diced shopping list
- 1/4 cup pineapple juice shopping list
- 3 green onions sliced thin for garnish shopping list
- 2 Tablespoons sea salt shopping list
- 2 tablespoons Agave Nector shopping list
- 1 Tablespoon brown sugar shopping list
- 1 Tablespoon dark molasses shopping list
- 4 cups of water for poaching liquid shopping list
How to make it
- In a pot place the butter and the flour and turn to medium high
- when the butter melts add the onion and simmer until onions turn translucent
- Add the Soy Milk and the Nantucket Nector Juice,the Pineapple juice while stirring with a rubber spatula until it is creamy
- Adjust for seasoning add pepper flakes or Fresh ground Black Pepper if desired
- Add the steamed spinach and stir
- Add the chopped Pineapple and set heat to low.
- In a second pot place the water and the some sea salt along with the bonito flakes and the Norri strip
- Poach the Salmon for 15 minutes
- To Plate place the Green onions around the perimeter, place a piece of Salmon on the plate
- Spoon the Spinach and Pineapple Be'chamel Sauce around and over the Salmon
- Serve at once
