Ingredients
  • 2 Wild Caught salmon Fillets
  • 1 Package Organic baby Spinach steamed lightly, just until it wilts
  • 1/2 Spanish Onion chopped
  • 1/2 cup Bonito Flakes
  • 1 strip Dried Norri
  • 1 tablespoon Mushroom powder
  • 1cup Nantucket Nector, Pineapple, Orange,Mango Juice
  • 1/2 cup vanilla soy Milk
  • 3 tablespoons Sweet Butter
  • 3 Tablespoons Flour
  • 4 Pineapple rings diced
  • 1/4 cup Pineapple Juice
  • 3 Green Onions sliced thin for garnish
  • 2 Tablespoons Sea salt
  • 2 tablespoons Agave Nector
  • 1 Tablespoon Brown sugar
  • 1 Tablespoon Dark Molasses
  • 4 cups of water for poaching liquid

Directions
  1. In a pot place the butter and the flour and turn to medium high
  2. when the butter melts add the onion and simmer until onions turn translucent
  3. Add the Soy Milk and the Nantucket Nector Juice,the Pineapple juice while stirring with a rubber spatula until it is creamy
  4. Adjust for seasoning add pepper flakes or Fresh ground Black Pepper if desired
  5. Add the steamed spinach and stir
  6. Add the chopped Pineapple and set heat to low.
  7. In a second pot place the water and the some sea salt along with the bonito flakes and the Norri strip
  8. Poach the Salmon for 15 minutes
  9. To Plate place the Green onions around the perimeter, place a piece of Salmon on the plate
  10. Spoon the Spinach and Pineapple Be'chamel Sauce around and over the Salmon
  11. Serve at once

Good heavens - how brilliant! I can't stop thinking through the ingredient list and imagining how very delicious this would taste. Plus, it's a beauty to present.
