This can also be done boneless with pork loin. Commercial pork today is safe to serve at 145 degrees, which is medium rare. This will be very light pink. It is moist and tasty. For medium cook to 145 and let the oven bounce (meat keeps cooking after removing from heat) bring it to medium. Pork cooked above this is dry and chewy.
