These cookies have the crunch of toffee and almonds through it.

Ingredients
- 1 stick butter, softened
- 1 cup plus 2 tbls. sugar
- 1 egg
- 1 tbls. dark rum
- 1 tsp. vanilla extract
- 1 cup flour
- 1/2 cup cocoa, unsweetened
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 cups toffee bar, such as Heath or Skors
- 1/2 cup almonds, chopped
Directions
- Preheat oven to 350
- Beat butter and sugar until fluffy
- Add egg, rum, and vanilla until well blended
- Sift flour, cocoa, baking soda, and salt into mixing bowl
- Stir dry ingredients into butter mixture
- Mix in toffee and almonds
- Drop one tbls. of batter onto ungreased baking sheet, about 2 inches apart
- Bake 10-12 minutes
- Should puff slightly and crack on top
- Let cool on sheet for a minute, then transfer to rack to cool
